Woodfired Fermentation Crock
Woodfired Fermentation Crock
These crocks are wheel-thrown using fine-grained porcelaneous clay, and glazed with a Shino glaze on the interior only. All other color is a result of the unique firing atmosphere in which flame is touching the clay and painting on it.
This particular one came from an Anagama kiln in Port Orchard, WA. It is 9” diameter and 12” tall. It weighs 10 1/2 lbs on its own, and comes with two sets of stones. When I make a crock whose volume is over a gallon, I make two sets of stones so that you can use it at half-volume if you’d prefer. The two sets of stones with this crock weigh 4 lbs. This crock holds 7 quarts, as measured to the bottom of the (upper) stones, and assuming at least an inch of space for brine above
The glaze repair in the fourth photo is to smooth over a cosmetic blemish on the interior of the lid. The repair is food-grade.
